Spaghetti Fresh Tomatoes and Potatoes | Spaghetti Recipe

Ingredients: Spaghetti Fresh Tomatoes and Potatoes | Spaghetti Recipe

 

 

Potatoes unpeeled                                                       2 medium

Garlic cloves, peeled and crushed                             3

Basil, chopped                                                              1 small bunch

Olive oil                                                                         6 tbsp

Ripe tomatoes, skinned and chopped                       4 large

Red chili, deseeded and finely chopped                    1 small

Salt                                                                                 to taste

Black pepper                                                                 to taste

Spaghetti                                                                       450 g

Parmesan cheese, freshly grated                               to serve (optional)

 

 

Preparation Method: Spaghetti Fresh Tomatoes and Potatoes | Spaghetti Recipe

 

Preheat the grill at high flame for 5 minutes before using. Cook the potatoes in plenty of boiling water until tender but firm. Allow to cool, then peel and cut into cubes.

 

Blend the garlic, basil and 4 tablespoons olive oil in a blender or food processor until the basil is finely chopped the keep a side.

 

Place the tomatoes, basil and oil mixture in a small bowl, add the chili and season with salt and black pepper to taste. Mix together and reserve the sauce.

 

Take a large pan of salted boiling water, add spaghetti in it and cook according to the packet instructions or until al dente.

 

Meanwhile, toss the potato cubes with the remaining oil and move to a baking sheet. Place the potatoes under the preheated drill until they are crisp and golden, turning once or twice, then drain additional oil on the absorbent kitchen paper.

 

Drain the pasta thoroughly and transfer to a warmed shallow serving bowl. Add the tomato sauce and the hot potatoes. Toss well and adjust the seasoning of Spaghetti dish to taste. Serve immediately with the grated parmesan cheese, if using.
