Tomatoes (boiled and chopped), 2

Fresh cream, ½ cup

Zucchini (chopped), 1

Onion (chopped), ½ cup

Cheddar cheese (grated), ¼ cup

Green chilies (chopped), 2 tbsp

Black pepper (crushed), 1tsp

Fresh coriander, ¼ cup

Salt, to taste

Cooking oil, as required

Heat the oil in a pan, cook zucchini and onions till becoming golden.

 

Beat eggs and mix cooked zucchini, onions and the remaining ingredients.

 

Heat the oil in a frying pan and fry the ready mixture from both the sides until it is light brown (like an omelet).

 

Cut this Spanish Frittata into small pieces and serve hot with tomato sauce or chili chutney.
