Spanish Garlic Soup Recipe is a simple and satisfying soup, made one of the most popular ingredients in the Mediterranean region that is Garlic!

Spanish Garlic Soup Recipe

4 garlic cloves, peeled

4 cups of beef stock

2 tbsp olive oil

4 eggs

1 tbsp paprika

4 slices French bread, ¼ in thick

¼ tsp ground cumin

Pinch of saffron strands

Salt and pepper

Chopped fresh parsley, to garnish


Preparation Method:

Preheat the oven to 230 C. Heat the oil in a large pan, add all garlic cloves and cook until golden. Remove and set aside. Fry the bread in the oil until golden then set aside.

Add the paprika to the pan and fry for a few seconds, stirring. Stir in the beef stock, cumin seeds and saffron then add the reserved fried garlic after crushing them through a wooden spoon. Now add salt and black pepper then cook for about 5 minutes.

Pour the soup into 4 ovenproof bowls and gently break an egg into each one. Place the slices of French bread on top of each egg and place it in the oven for about 3-4 minutes or until the eggs are set. Sprinkle with chopped fresh parsley and serve Spanish Garlic Soup at once.
