For those who are trying to cut down their sugar intake, this apple ring cake can be made without the sugar and it is equally superb and delicious. You can enjoy and taste a sweet and spicy flavor simultaneously.

500g dessert apples
125g wholemeal flour
8 tbsp milk
30g vegetable margarine
100g grounded hazelnuts
1 ½ tsp baking powder
1 tsp cinnamon powder
A pinch grounded cardamom
A pinch grounded nutmeg

Grate the apples on the coarse side of a cheese grater.
Put the grated apple into a bowl along with the hazelnuts and combine well.
Add flour, sugar, bran, baking powder and other spices to the apple mixture and stir well to blend the ingredients thoroughly.
Rub the margarine into the apple and flour mixture until it is evenly combined and no large lumps remaining.
Stir in the milk and mix to a fairly stiff batter.
Carefully pour the batter into a lightly greased 6 inches mould.
Make the top even with the help of a metal spoon and allow the cake to stand in the tin for about 5 minutes before baking.
Bake the cake on high for 3 minutes then reduce the power to medium and continue cooking for a further 4 minutes. After this time, the cake should be set but still moist.
Allow the cake to cool in the dish for 10 minutes before turning onto a wire rack to cool completely.
Serve hot as a dessert with a custard sauce if desired or a hot apple puree.
You can use almonds instead of hazelnuts in this cake recipe.
This Spiced Apple Ring Cake can be frozen for up to two months and it will become moister during this process.
