Carrot and Lentil Soup is the thing to eat after a long day work; when the evening is beginning to get a bit freeze, this is a welcome dish. You can make this soup in advance, reheat when you come home.
Ingredients: Spiced Carrot and Lentil Soup Recipe
Carrot, peeled and thickly grated 4 large
Vegetable stock 4 cups
Red lentil (masoor daal) 1 cup
Milk 1 cup
Cumin seeds 2 tsp
Red chili flakes 1 tsp
Olive oil 2 tbsp
Preparation Method: Spiced Carrot and Lentil Soup Recipe
In a frying pan, fry the cumin and chili flakes and remove and keep aside. In the same pan, add the lentil, carrots, stock and milk and bring to boil.
Simmer for 15 minutes or until the lentils are cooked through and soft. Cool it and blend in a food processor until smooth.
Season with salt and pepper, reheat and serve sprinkled with the cumin seeds and chili flakes mixture. If you like, you can add a spoon of yogurt on top of the Spiced Carrot and Lentil Soup.
