Spiced Carrot Dip is a delicious dip with a sweet and spicy flavor. Serve wheat crackers or fiery tortilla chips as accompaniments for dipping.
Ingredients: Spiced Carrot Dip | Spiced carrot Sauce
3 carrots + 1 extra to garnish
2 oranges grated rinds and juice
1 tbsp hot curry paste
2 tbsp lemon juice, to taste
Fresh basil leaves, to garnish
Red Tabasco sauce, to taste
Salt and freshly grounded black pepper
Spiced Carrot Dip | Spiced carrot Sauce
Finely chop the onion. Peel and grate the carrot. Place the carrot, onion, orange rind, orange juice and curry paste in a small saucepan. Bring to boil, cover and simmer gently for 10 minutes, until tender.
Process the mixture in a blender or food processor until smooth. Leave to cool completely.
Stir the yogurt then cut the basil leaves roughly into small pieces and stir them into the carrot mixture.
Add the lemon juice and Tabasco and season with salt and black pepper.
Serve Spiced Carrot Dip within a few hours at room temperature.
