Ingredients for this chicken kadhai recipe have been classified into five categories that help to cook the kadai chicken recipe in different segments easily. These ingredients are:

  • 1 Kg chicken and 10 pieces
  • Black peppercorns 1 tsp
  • Fennel seeds 1 tsp
  • Cinnamon up to 1 tsp
  • Oil 2 tsp
  • Two tsp spice paste
  • Red chili powder 2 tsp
  • Salt
  • Coriander powder 2 tsp
  • Jaggery one tsp
  • Pepper-fennel powder 2 tsp
  • Turmeric powder 1 tsp
  • Tamarind extract 3 ½ tsp
  • Juice of half fresh lemon
3-Spice Paste:
  • Garlic-ginger paste 2 tsp
  • Cumin powder 1 tsp
  • Turmeric powder 1 tsp
  • Red chili powder 1 tsp
  • Salt
  • Coriander 1 tsp

4-Mix Fry:

  • Diced half onion
  • Oil 1 tsp
  • One green chili
  • Dice half red bell pepper
5-Other Ingredients:
  • Oil 2 tsp for searing the chicken
  • Onions with green (Garnishing)
  • Lemon juice for top
  • Julienne and ginger to garnish

You need to follow the directions very carefully as the cooking method is also according to the ingredients. The overall cooking method has five different steps.

1-Powder Preparation:

Dry cinnamon, fennel, and roast black peppercorns and grind them well and pestle aside

2-Make the Spice Paste:

Mix all the given ingredients below spice paste powder

3-For Marinade:

Take a pan and add 2 tsp oil

Add two tsp of spice paste and cook and turn off the fire

Start adding Jaggery, juice of half lemon, turmeric powder, red chili powder, coriander powder, pepper-fennel powder, salt, and tamarind extract one after the other

Use this paste to marinade chicken well and let it for 30 minutes

4-Stir Fry:

Add green chili, bell pepper, and onions and cook for two minutes and keep it aside

Take oil in a big pan and sear the pieces of the chicken well from both sides

Add the water up to 1-1 ½ cup and keep the lid and cook it for 30 minutes

Put in mixed fried vegetables and stir whole well

Garnish with ingredients under other ingredients
