Ingredients:

Spicy Spring Lamb Roast Recipe

1.5 kg Lean leg spring Lamb

1 tsp Chili powder

1 Garlic clove, crushed

One tsp Ground coriander

1 tsp Ground cumin

Salt to taste

2 tsp Desiccated coconut

2 tbsp Almond

3 tbsp Yogurt

2 tbsp Lemon juice

Two tbsp Sultanas

2 tbsp Cooking oil

 

For Garnish:

2 Sliced tomatoes

1 Large carrot (cut Julian style)

Lemon wedges

Mixed salad leaves

Fresh coriander leaves

 

Preparation Method:

Spicy Spring Lamb Roast Recipe

Preheat the oven to 180 degrees. Trim off the extra fat, rinse and pat dry the leg of lamb and set aside on a sheet of foil large enough to enclose the whole joint.

In a medium bowl, combine garlic, chili powder, cumin, coriander and salt.

In a blender process together with the desiccated coconut, almond, lemon juice, yogurt,  and sultanas until you get a smooth texture.

Add the contents of the food processor to spice mixture together with the cooking oil and mix together. Pour this mixture on the lamb leg and rub over the meat.

Cover the meat with the foil and place in an ovenproof dish. Cook in the preheated oven for 1 ½ hour.

Take out the lamb leg from oven and open the covered foil and by using the back of a spoon, spread the mixture evenly over the meat again. Return the lamb, uncovered, to the heated oven for another 45 minutes or until it is cooked properly and tender.

Spicy Spring Lamb Roast is ready, cut the meat and serve with garnish ingredients.
