Ingredients:

Spinach Stuffed Mushrooms 

25 open cup mushrooms

100g button mushrooms

30g butter

100g young spinach

1 egg

1 bunch parsley

2 shallots

1 tsp oregano

Salt and pepper

125mlsingle cream

6 tbsp white wine

 

Preparation Method:

Spinach Stuffed Mushrooms 

Clean the open cup mushrooms; remove and reserve the stalks. Grease a large ovenproof dish with half the butter and arrange the mushrooms in it, gills upward.

Wipe the button mushrooms. Wash the spinach and parsley.

Chop the button mushrooms, reserved stalk, spinach, and parsley.

Heat the oven to 220° C.

Put the remaining butter in a saucepan. Finely chop the shallots and sweat until transparent. Add the mushrooms, spinach, oregano, parsley, salt, and pepper. Cook briefly, then remove from the heat.

Mix the egg with the cream and stir into the mixture. Spoon the mixture into the mushrooms.

Sprinkle with the wine and cover the dish with aluminum foil. Cook in the oven for about 20 minutes.

Serve this Stuffed mushroom as a starter.
