Sweet Potato Oven Cakes Recipe

Enjoy this baked version of the Sweet Potato Oven Cakes Recipe.

Sweet potatoes, peeled and grated, 3 medium

Applesauce (pure), ½ cup

Onion, ½ small

Whole wheat flour, 4 tbsp

Baking powder, 1 tsp

Salt and black pepper, to taste

Preheat oven to 400 C.

Lightly grease a cookie sheet with oil.

Grate sweet potatoes and onion into a large bowl, Add apple sauce, flour, baking powder, salt, and pepper and mix thoroughly by hand.

Place rounded mounds of the mixture on cookie sheet.

Bake for 20 minutes; flip the spatula and bake of the other side for another 20 minutes or until golden brown.

Serve Sweet Potato Oven Cake with extra apple sauce.
