Ingredients:

750g tomatoes, peeled and chopped

2 tbsp olive oil

1 large onion, chopped

2 garlic cloves, crushed

1 carrot, finely chopped

1 celery stalk, finely chopped

4 tbsp vegetable stock

2 tbsp red wine

1 tsp sugar

Bouquet garni

1 tbsp tomato paste or to taste

Salt and black pepper

Heat the oil in a saucepan; add the garlic and onion and sauté until soft and pale golden brown. Add the celery and carrot and continue to cook, stirring occasionally until it becomes golden.

Include tomatoes, stock, wine and bouquet garni. Add salt and black pepper to taste.

Bring the tomato mixture to a boil then cover and simmer gently for about 45 minutes, stirring occasionally.

Remove the bouquet garni, taste the sauce and adjust the seasoning, adding sugar and tomato paste as desired.

Serve the tomato sauce as it is or to get a smoother texture, press through a sieve or make a smooth puree by using a food processor or blender.

Use Tomato sauce as a base on pizza or serve as the pasta sauce, or alongside barbecued or pan-fried meat or fish.
