Tomato Watermelon Gazpacho | Cold Soup Recipe

Gazpacho is a soup of southern Spanish region that is made of raw vegetables and it is served cold. The combination of Tomato and Watermelon are surprisingly refreshing. Enjoy for Lunch at any stage, it is a super soup recipe.

 

Ingredients:

Tomato Watermelon Gazpacho | Cold Soup Recipe

 

Small Red watermelon, seedless, peeled and cut into large pieces

3 large Red tomatoes, slash into large pieces

1 cucumber, cut into chunks

Few parsley sprigs, chopped

Few cilantro sprigs, chopped

½ jalapeno, seeded and convert into pieces

125g tomato juice

3-4 shakes Hot sauce

1 tbsp Sherry vinegar

½ cup from Lime juice

1/2 tsp Dijon Mustard

½ Avocado (optional)

Salt and freshly ground pepper to taste

 

 

Preparation Method:

Combine all the prepared ingredients in a big glass bowl and include all liquids into it and add salt and pepper as per your taste.

 

Leave the mixture for couples of hours to marinate and after that place in a blender and blend it until you get a desired consistency.

 

Chill Tomato Watermelon Gazpacho well before serving. Top with diced avocado if desired.
