Ingredients:

Tomato Watermelon Gazpacho Recipe

Red watermelon, seedless, peeled and cut into chunks, small

Red beefsteak tomatoes, cut into chunks, 2-3 large

Cucumber, cut into chunks, 1

Parsley, chopped, ¼ bunch

Cilantro, chopped, ¼ bunch

Jalapeno, seeded and cut into chunks, ½

Tomato juice, ½ qt

Hot sauce, 4 shakes

Sherry vinegar, 1 ½ tbsp

Lime juice, ½ lime

Dijon Mustard, 1/2  tsp

Avocado (optional),  ½

Salt and freshly ground pepper, to taste

 

Preparation Method:

Tomato Watermelon Gazpacho Recipe

Combine all the cut ingredients in a large glass bowl. Pour all the liquids over it and season with the salt and pepper. Allow mixture to marinate for couples of hours and after that place in a blender and blend it until you get the desired consistency. Chill well before serving. Top with diced avocado if desired.
