400 g cans tuna, drained

275 g frozen chopped spinach

1 onion, finely chopped

1 lemon

4 slices, white bread

2 eggs

120 ml soured cream

Salt to taste

Tabasco to taste

Parsley to garnish

Lightly grease a medium oblong microwave-safe loaf dish.

In a medium microwave-safe bowl combine cooking oil and onion. Cover and cook on high power for 2-3 minute until onion softens; set aside.

Thinly slice half of the lemon, cover, and reserve. Squeeze juice from remaining half.

Remove frozen spinach from packet and place on microwave-safe plate. Heat on medium-low power (30%) for 5-6 minutes until defrosted, turning spinach over once. Squeeze spinach to remove liquid as much as possible.

In a large bowl, finely crumble the tuna. By use of hands, finely tear the bread. Add bread to tuna with onion mixture, spinach, lemon juice, eggs, soured cream, Tabasco, and salt and combine well. Transfer this mixture to the prepared loaf dish.

Covered and cook with grease-proof paper on medium power (70% power) for 12-13 minutes until knife inserted 2.5 cm from center comes out clean. Rotate the dish halfway during cooking. Allow loaf to stand, covered on the heatproof surface for 5 minutes.

Unfold loaf on a warmed serving platter. Garnish with reserved lemon slices and parsley sprigs to serve.

 

Unfolding the Loaf

With a knife, loosen loaf from the side of the dish. Place serving platter upside down on dish and invert. Carefully remove the dish to un-mold loaf.
