Vegetable Biryani Recipe |Vegetable Biriani Recipe

Biryani is an Indian rice dish usually served as an accompaniment to a main-course curry. Sometime it has meat, fish or chicken added to it and it is served with a curry sauce. If you like to present with curry, you can serve this biryani as a vegetable accompaniment to any main course meat dish, chicken dish or fish dish. You can serve this delicious briyani with chutney or plain yogurt also.

Serves 4-6

Long grain rice                                  225 g

Vegetable oil                                      2 tbsp

Onion, chopped                                 1 large

Garlic cloves, chopped                      2

Hot curry powder                              2 tsp

Ground cinnamon                              ½ tsp

Ground ginger                                    ½ tsp

Tomato puree                                    1 tbsp

Carrot, diced                                      1 large

Salt                                                      2 tbsp

Raisins, seedless                                75 g

Water                                                  425 ml

Beans                                                   250 g

Green peas                                         175 g

Heat the oil in a large saucepan. Add the onion and garlic and fry gently for about 10 minutes until the onion is soft, do not brown, keep stirring frequently.

 

Add the spices to the pan, stir well and cook for a further 2 minutes.

 

Add the water, tomato puree, carrot and salt. Bring to boil.

 

Add the rice, raisins and beans and still well.

 

Lower the heat, cover the pan tightly and simmer very gently for 20 minutes without stirring.

 

Gently fork in the frozen peas, cover the pan and simmer very gently for a further 5 minutes. Taste and adjust seasoning. Take out the biryani into a warmed serving dish and serve hot.

Time

Preparation and cooking take about 45 minutes.

 

Watch Point

Try not to lift the lid of the pan during the cooking and do not stir unless absolutely necessary. By this way the rice will be tender and fluffy. Heat must be low at this stage.

 

Cook’s Tip

If using frozen beans, cook them straight from the freezer without defrosting.
