Veggie Pilau is a simple veggie recipe that is very famous among Indian vegetarian lovers. It is incredibly flavorfull and served its own. This is a popular vegetable dish that makes a tasty light supper.

Veggie Pilau | Vegetable Pilau

225 g basmati rice

2 tbsp oil

½ tsp cumin seeds

4 green cardamom pods

2 bay leaves

4 cloves

1 carrot, finely diced

1 onion finely sliced

50 g frozen peas

50 g frozen sweetcorn, thawed

25 g cashew nuts, lightly fried

1/1 tsp ground cumin



Preparation Method:

Wash the basmati rice in several changes of cold water. Put into a bowl and cover with water. Leave to soak for about 30 minutes.

Heat the oil in a large pan and fry cumin seeds for 2 minutes. Add the bay leaves, cloves, and cardamoms and fry for a further 2 minutes.

Add finely sliced onion and fry for 5 minutes, until it becomes soften and light brown.

Stir in the carrot and cook for 3-4 minutes.

Drain the rice and add to the pan together with the sweetcorn, peas and cashew nuts. Fry for 4-5 minutes.

Add 2 cups of water, cumin, and salt. Now cover and bring it to the boil and simmer for at least for 15 minutes over a low flame until all the added water is absorbed. Leave to stand, covered for 10 minutes before serving.

Enjoy Veggie Pilau or Vegetable Pilau with the green salad or yogurt raita.
