Veggie Pilau | Vegetable Pilau

Veggie Pilau is a simple veggie recipe that is very famous among Indian vegetarian lovers. It is incredibly flavorfull and served its own. This is a popular vegetable dish that makes a tasty light supper.

Veggie Pilau | Vegetable Pilau


225 g basmati rice

2 tbsp oil

½ tsp cumin seeds

4 green cardamom pods

2 bay leaves

4 cloves

1 carrot, finely diced

1 onion finely sliced

50 g frozen peas

50 g frozen sweetcorn, thawed

25 g cashew nuts, lightly fried

1/1 tsp ground cumin




Preparation Method:

Wash the basmati rice in several changes of cold water. Put into a bowl and cover with water. Leave to soak for about 30 minutes.


Heat the oil in a large pan and fry cumin seeds for 2 minutes. Add the bay leaves, cloves and cardamoms and fry for a further 2 minutes.


Add finely sliced onion and fry for 5 minutes, until it becomes soften and light browned.


Stir in the carrot and cook for 3-4 minutes.


Drain the rice and add to the pan together with the sweetcorn, peas and cashew nuts. Fry for 4-5 minutes.


Add 2 cups of water, cumin and salt. Now cover and bring it to the boil and simmer for atleast for 15 minutes over a low flame until all the added water is absorbed. Leave to stand, covered for 10 minutes before serving.


Enjoy Veggie Pilau or Vegetable Pilau with green salad or yogurt raita.
