Ingredients:

Small red potatoes, 20

Ears of sweet corn, 2

Carrots, 2

Celery, 3 stalks

Olive oil, ¼ cup

Yellow pepper, 1

Garlic clove, 1-2

Balsamic vinegar, ¼ cup

Fresh thyme, 2 sprigs

 

Preparation Method:

Veggie Potato Salad Recipe

Steam 20 small red potatoes and 2 ears of sweet corn until soft.

Chill corn and cut kernels right off the cob into the bowl.

Chill and quarter the potatoes and place in a bowl.

Chop 3 stalks of celery and add to bowl.

Chop 2 raw carrots and yellow pepper and add to the bowl.

Ina separate small grinder cup, combine olive oil, balsamic vinegar, garlic, and fresh thyme. Blend until smooth.

Pour the mixture over the ingredients in the bowl and toss together.

Keep Veggie Potato Salad in refrigerator.
