The Sundae is a fine way to end a romantic dinner with your love. It is made of two or three scoops of ice cream that is topped with sauce, syrup, chopped fruits, crushed nuts and a variety of toppings.

Ingredients: White Chocolate and Raspberry Sundaes
1 liter vanilla ice-cream
2/3 cup castor sugar
2 tablespoons of lemon juice
165g pack of white chocolate biscuits (make curls)
300g frozen raspberries
White chocolate curls for serving.
Preparation method: White Chocolate and Raspberry Sundaes
In a large bowl place ice cream and set aside until softened though not melted. Fold in the white chocolate biscuits in the ice cream. Spoon the mixture in a deep 7 cm, 14cm X 20cm airtight jar, smooth and cover with plastic wrap and freeze overnight.
Place lemon juice, sugar and 1/3 cup of warm water in a saucepan over medium heat. Stir until sugar is completely dissolved but do not boil the mixture. Add half raspberries and bring to boil. Lower the heat and simmer for 4 to 5 minutes until a slightly thick consistency is achieved. Process in a food processor until smooth and pour in a jug. Discard any solids that may remain and cool for about 20 minutes.
Place 3 scoops of ice cream mixture in every bowl and drizzle with raspberry sauce. Top up with chocolate shavings and remaining raspberries and serve.
Notes: White Chocolate and Raspberry Sundaes
You can store any leftover raspberries sauce in an airtight pot in fridge for up to 3 days.
Use a vegetable peeler to make white chocolate curls.
You could make a variation and use dark chocolate instead of white.
