2 ½ cups milk
2 tbsp butter
¼ cup all-purpose flour
Black ground pepper

Place the milk is a saucepan and make warm on over low heat, do not boil.
In another saucepan melt the butter then stir in the flour and cook gently for about 2 minutes to make a roux. (A mixture prepared from equal amounts of flour and butter). Don’t make this mixture brown.
Remove the saucepan from the heat and gradually blend the milk, keep stirring briskly after each addition to prevent lumps from forming.
Return to the heat and bring to a boil lightly, stirring occasionally until the sauce thickens.
Simmer calmly for another 3 minutes or until thickened and smooth. Add salt and grounded black pepper as per your taste.
VARIATIONS: White Sauce Recipe
Parsley sauce is traditionally served with cured meat, fish and fava beans. Stir in 2 tablespoons freshly chopped parsley just before serving.
Cheese sauce makes delicious egg and vegetable gratins. Stir in ½ cup finely grated old cheddar cheese and ½ teaspoon prepared mustard.
