Lime Curry is used as a spread and a puree. It is a low budget recipe, easy to cook recipe and less time consuming recipe gives a feeling of comfort in summer, winter, fall or spring season.
Serves 4-5 People
Ingredients: Yellow Peas Lime Curry Recipe
- Split Yellow Peas – 1pound
- Vegetable Oil – 2tablespoons
- Chopped Medium Sized Yellow Onion – 1
- Thai Curry Red Paste – 1tablespoon
- Coconut Milk – One Can (15 Ounce)
- Chopped Lemongrass – ½stalk
- Zest of Grated Lime -1
- Lemon Juice -1
- Minced Garlic – 1 clove
- Salt to Taste
Cooking Method: Yellow Peas Lime Curry
Add hot water in a saucepan to cover the yellow peas.
Add chopped onions and let them simmer for 2 minutes.
On medium low heat, add lime zest, salt, garlic and lemongrass.
Cover the top partially and stir on a frequent basis.
Add some water if the ingredients are getting dry.
Simmer these ingredients for 75 minutes.
When the peas will fall to pieces, take out the lime curry from the stove.
Pour lime juice in the curry and keep it aside for 60 minutes.
You may be excited to serve the dish immediately, but peas require enough time for adsorbing the taste.
The curry will thicken after getting cold.
Before serving, heat up the dish.
Present the curry with naan, steamed rice or warm pita bread.
