Plan Spicy Yogurt Marinated Chicken recipe in advance, the extra long marinating hours are required to develop a really tangy spicy flavor.

Ingredients:

Yogurt Marinated Chicken Recipe

6 chicken pieces

1 lemon juice

1 tsp salt

 

For the yogurt marinade

2/3 cup yogurt

1 tsp coriander seeds

2 garlic cloves

2 tsp cumin seeds

1 onion quartered

2 bay leaves

2-inch fresh ginger root, peeled and chopped

½ tsp red chili powder

1 tsp turmeric powder

Remove the skin from the chicken and make the deep cuts in the flashiest parts with a sharp knife. Sprinkle the lemon juice and salt and rub in effectively.

Make the yogurt marinade. Spread the coriander seeds and cumin seeds, cloves and bay leaves in a large frying pan and dry-fry over medium heat until the bay leaves are crispy.

Let the spices mixture cool then grind it coarsely in a mortar and pestle.

Now place the onion, ginger, garlic in a food processor or blender with chili powder, ground spices, turmeric, and yogurt. Add some lemon juice also and mix them well.

Arrange the chicken in a singer layer in a roasting tray. Pour on the marinade then cover and chill for 30-36 hours, turning the chicken pieces occasionally.

Preheat the oven to 400 F. Cook the chicken for about 45 minutes or until the juices run clear when the meat is pierced. Serve hot or, garnished with fresh mint and slices of lime or lemon.

Variation:

This yogurt marinade will also work well with lamb skewers or beef fillet brushed prior to grilling or broiling.
