Chicken in Lychee sauce is a Chinese favorite; lychees are normally added with several recipes during the season. Lychees are regularly used to provide a different taste and texture in several popular recipes. The Lychees with chicken are an unusual but a captivating combination. Ingredients: Chicken in Lychee Sauce
Chicken breast skinned, 500 g
Cornflour, 3 tbsp
Vegetable oil, 3 tbsp
Chicken stock cube, 1
Onion, thinly sliced, 1
Tomato ketchup, 2 tbsp
Soy sauce, 2 tbsp
Boiling water, 2 tbsp
Large tomatoes, skinned and chopped, 2
Can lychees, 312 g
Spring onion, chopped, 2 tbsp
Lemon Juice, 2 tbsp
Black pepper, freshly chopped, to taste
Preparation Method:

Cut away the bones from the chicken with a sharp knife and remove fat if any. Cut the chicken into ½ cubes.
Put in the cornflour into a polythene bag then add the chicken cubes and shake until well coated.
Heat the oil in a large frying pan, add the onion and fry gently for 5 minutes until soft and lightly colored.
Raise the heat, add the chicken and fry about 5 minutes, turning frequently until lightly browned from all the sides. Remove the frying pan from the heat.
Now dissolve the chicken stock cube in a bowl with the boiling water. Stir in the tomato ketchup and soy sauce then stir this mixture into the chicken together with the quartered lychees and the syrup, tomatoes and half the spring onion. Mix well.
Return to the heat, bring to the boil then simmer for 1 minute, keep stirring constantly. Cover with a lid or foil and simmer gently for a further 5 minutes or until the chicken is tender and cooked thoroughly. Stir in the lemon juice and black pepper as per your taste then move to a lukewarm serving dish. Add the remaining spring onion. Serve straight away.
