Cook Awesome is a new breath of fresh air for individuals who are interested in the art of cooking. Unlike the sites online that offer a myriad of different recipes managed by professional cookery magazines or channels, this site is a personally maintained cooking site that also touches other aspects of “How to” in home improvement areas for those who believe leisure starts at home (especially the kitchen!).

Cut the ready onion lengthways into slices
For onion rings, first cut the tip from the whole onion. Then cut the onion across into thin, even slices
Halve the onions lengthways and make a vertical cut to just above the root.
Make several fine horizontal incisions in each portion of half onion.
Finely, hold the onion firmly and slice thinly; it will fall into fine dice.
A raw sauce or uncooked mixture of vegetables or fruits is called “Salsa Crudo”. It is easy to create your own vegetable combinations of flavor. A good basic start for a salsa crudo is chilies, peppers, garlic and onion. Serve grilled lamb, fish, chicken or pork.
Peel, deseed or trim all the vegetables as desired, then use a sharp knife to cut them into small, even dice. Try to combine the texture and color as well as taste and use chilies and other spicy ingredients sparingly. Put all the diced ingredients into a bowl.
Add 1-2 tbsp olive oil and squeeze of lemon juice and stir in finely chopped fresh basil, parsley or mint to enrich the flavor. Add salt and pepper to taste and toss well before serving.
Clear butter is ideal for serving with vegetables such as artichokes or asparagus. Clarified butter is the butter that has been melted and all the salt, moisture and impurities removed, making it clear, rich pure flavor. Clarified butter is called Ghee in India. It is used in Indian cooking; it can be kept longer and can be heated to higher temperatures than ordinary butter without the risk of burning. It can be used for sautéing and sauces as it gives a mild flavor and high gloss.
There are two important method of clarifying butter.
Place the butter in a saucepan with an equal amount of water. Heat until the butter melts. Remove the pan from heat and let it cool until the butter is sets. Carefully lift out the fat, leaving the water and solids behind.
Alternatively, melt the butter in a small pan over very low heat then skim then skim off the froth with a perforated spoon. Pour the rest through a sieve lined with fine muslin, to strain out the solids.
Making Savory Butters
Flavored butters can be shaped or piped decoratively to serve with grilled steaks or poached or frilled fish.
To make an herb-flavored butter, finely chop your choice of fresh herbs, Beat the butter until softened then stirs in the herbs and mix evenly.
