The Mango Energy Bite Recipe is a special snack prepared with only six ingredients. It is prepared within 17 to 20 minutes and it is vegan and also Gluten-Free.

 

Ingredients:

The Mango Energy Bite Recipe

  • 1 ¼ 150 grams of raw cashews or walnuts ( You can mix them both)
  • 1 cup of (155 grams or 5.5 ounces) firmly packed dried unsweetened mango
  • 10 pitted of dates
  • 2 tablespoons or 20 grams of hemp seeds
  • 1/3 cup of 29 grams of unsweetened shredded unsweetened coconut
  • 1 zested lime
  • Pinch of sea salt.

 

Instructions:

The Mango Energy Bite Recipe

  1. Preheat the oven to about 350oF or 176oC; arrange cashew nuts, walnut or mixture of them in a baking sheet. Toast the nuts for about 8 to 12 minutes or till turned light golden brown as well as fragrant. Set the toasted nuts aside.
  2. Within the period in-between, put dried mango into a mixing bowl and cover the bowl with warm water. If you skip this particular step, the dried mango will be too tough to blend. Allow the dried mango soak inside warm water for about 5 to 7 minutes or till pliable or soft but, avoid it getting too soggy. Drain the mango and put inside a towel and remove excess moisture.
  3. Put the nuts inside a food processor and mix them into a fine meal. Bring it out from the bowl and put aside.
  4. Add dried mango soaked and pitted dates to your food processor and blend till a sticky dough or rough paste forms.
  5. Put back the nut meal together with shredded coconut, hemp seeds, sea salt, and lime zest. Mix these things till moldable dough is formed. Add more hemp seed or coconut if the mixture feels more wet or sticky. If the mixture is too dry you should add more dates.
  6. Scrap out rounded Tablespoon amounts and roll them into small balls using the palms of your hand. Then, add more hemp seeds or shredded coconut or simply a mixture of both.
  7. Go ahead and enjoy the meal immediately. Store for about 3 to 4 days at room temperature inside the refrigerator for one week or inside the freezer for about 1 month.
