Salads are a must addition to any table and Easter table seems to be empty without this unique salad recipe. The combination of apricots, snow peas and pistachios will definitely give the salad a new spin and your guests will definitely love it.
Ingredients: Awesome Apricot Pistachio Salad Recipe
- Lemon – 1
- Lettuce leaves – 2
- Pod peas – 8 ounces
- Parsley leaves – ½ cup
- Mint leaves – ½ cup
- Fresh dill leaves (chopped) – 1 tablespoon
- Chives (sniped) – 1 tablespoon
- Dried apricots (thinly sliced) – ¼ cup
- Salted, roasted and shelled pistachios – 1 cup
- Salt to taste
- Pepper –as per taste
- White balsamic vinegar – 2 tablespoon
- Extra virgin olive oil – 1/3 cup
Preparing Method: Awesome Apricot Pistachio Salad
In a jar with a tight-fitted lid, pour oil, grated peel of lemon and 2 tablespoons of lemon juice. Mix well and then add vinegar, 1/8 teaspoons freshly ground black pepper and ¼ teaspoon salt. Cover and shake well. Let the mixture to stand for 2 hours or if possible, rest in refrigerator for up to 3 days. Bring the mixture to room temperature before serving.
Fill a large bowl with water and ice. Heat a saucepan filled with water and bring to boil on high heat. Add the peas and cook for 2 minutes or until they are bright green in color. Drain and transfer to the iced water immediately. When they are cooled down, drain again and set aside.
On the serving platter, toss lettuce, apricots, peas, pistachios and herbs with hands. Shake the dressing and drizzle over the salad or can be served alongside as well.
