Multi Colored Vegetable Stew dish can be made with different combinations of vegetables, depending on the time of year.

Multi Colored Vegetable Stew Recipe

1 small aubergine

2 small courgettes

1 yellow pepper

1 red pepper

400g floury potatoes

2 onions

375g can tomatoes

2 garlic cloves

1 sprig rosemary

1 sprig thyme

2 tbsp olive oil

125 ml dry red wine

Remove the stalk end from the aubergine. Wash and chop the aubergine into1/1 in slices. Sprinkle with salt and leave for about 30 minutes.

Meanwhile, wash the courgettes and peppers. Remove the stalk ends from the courgettes. Peel and wash the potatoes. Slice both the vegetables.  Halve, core and deseed the peppers; slice into fine strips. Finally, chop the onion and garlic.

Squeeze out the aubergine slices. Arrange in alternate layers with the other vegetables in a large microwave dish. Chop the tomatoes and pour over the other vegetables with the juice. Add the herbs, salt, and black pepper. Pour over the olive oil and red wine. Cover and cook for about 30 minutes at 600 watts. Uncover and leave it for 10 minutes.

Leave the vegetables to stand for a short time. Mix carefully and remove the sprigs.

Serve Multi colored Vegetable Stew with grilled meat or fish.
