The no-bake pumpkin pie balls are made with all plant-based ingredients making them 100% vegan. Instead of refined sugar, maple syrup is rather used as the sweetener. Also for perfect healthy coating pure coconut sugar is used. Pumpkin spice and cinnamon are used to ensure alluring flavor and smell.

  • 1 c. of gluten-free flour
  • 1 ¼ c. almond flour
  • 3 T. of maple syrup
  • 1/3 c. of pumpkin puree
  • ½ t. cinnamon
  • ½ t. pumpkin pie spice
  • A pinch of salt
  • ½ t. vanilla.

Ingredient for   Sugar Coating:

  • ¼ c. coconut sugar
  • ¼ t. cinnamon
  • ¼ t. pumpkin pie spice.

 

Preparation Method:

  1. Inside your large bowl, mix the almond flour and oat flour. Beat to combine.
  2. Put the pumpkin pie ball leftover ingredients into the same bowl and toss till harmonized, to make sure you get even mixture, you should use your hands close to the end of the mixing.
  3. Inside another smaller bowl mix ¼ t. cinnamon, coconut sugar, ¼ t. pumpkin pie spice beat to mix together perfectly.
  4. Bring out 1 ½ tbsp mixture of the pumpkin ball and form a ball.
  5. Put the pumpkin pie ball in the bowl of coconut sugar to coat it completely. Put into large baking sheet or plate.
  6. Continue with the two steps above until you roll the remaining mixture into pie ball.
  7. Serve immediately for best texture. These energy bites can last up to 2 to 3 days under room temperature. To avoid the pie ball turning soggy you should avoid storing inside an airtight container.
  8. In case you want to preserve the pumpkin pie balls, you have to store at the back of your refrigerator, untouched and uncovered. In the process of doing this, the ball will get a little bit soggy but immediately you allow to stay in the refrigerator for one day or two, coconut sugar in the ball will become hard inside the ball making the pumpkin pie ball last for even 2 weeks. What you need is just patient!
