Chicken in any form has increasingly become a major part of our diet and for long I have been continuously trying out new recipes that can be enjoyed by the whole family. This is yet another variation of whole chicken offered with the palate enriched with protein, carbs and other nutritional benefits. Try this one out; the recipe has also been presented by Chef Shireen Anwer.
Ingredients: One Pot Meal Recipe
1 kg chicken whole (with cuts all over)
1 cup yogurt
1 tbsp garlic ginger paste
¼ tsp turmeric powder
1 ½ tsp chili powder
1 tsp chat masala
1 ½ tsp coriander powder
10 dried apricots (Aloo Bukhara)
6 harde boiled eggs, cut in 4 pieces
½ cup oil
½ kg rice
¼ tsp each of grinded nutmeg and mace
1 tbsp mixed all spice (whole)
2 tomatoes blended
A pinch of yellow color
2 tbsp chopped coriander leaves
3 tbsp chopped mint leaves
10 chopped green chilies
1 cup cheddar cheese
Preparation Method: One Pot Meal Recipe
Mix garlic ginger paste, turmeric powder, coriander powder and chili powder with yogurt and marinate the chicken with the mixture.
Separately boil presoaked rice adding yellow color whole mixed spices and salt. In a pan heat oil and fry only the chicken until golden on all sides. Add the leftover marinate sauce and cook covered until tender. Later add tomatoes, mace and nutmeg and cook on medium heat until the gravy thickens.
In a big platter place the cooked chicken in between and boiled rice on all the sides and garnish with eggs, cheese, french fries and chopped mint and coriander leaves.
