Ingredients:

Pistachio-Cream Sandwich Cookies Recipe

• 2 ¼ cups of all-purpose flour
• 1 tsp of baking powder
• 1 tsp of baking soda
• ½ tsp of kosher salt
• 1 ½ cups of unsalted butter prepared at room temperature
• ¾ cup of sugar, granulated
• ½ cup of pistachio paste
• 1 ½ tsp of vanilla extract
• 2 large eggs at room temperature
• Pistachio cream and assembly
• ½ cup of 1 stick of unsalted butter at room temperature
• ½ cup of pistachio paste
• 1/3 cup of sugar, powdered
• ½ tsp of vanilla extract
• ¼ tsp of kosher salt.

 

 

Preparation Method:

Pistachio-Cream Sandwich Cookies Recipe

1. Just preheat the oven to 350 degrees. Beat flour, baking soda, baking powder and salt inside medium size bowl. With the help of electric mixer set at medium-high speed, whisk granulated sugar; butter and pistachio paste inside a large bowl for about four minutes or continue till the mixture turned fluffy and light. Mix in your vanilla, eggs, ensure you mix the egg one at a time and ensure you whisk to harmonize perfectly be adding another. Bring down the electric mixer speed to low and gently add dry ingredients. Make sure you mix till combined perfectly.

2. Scrape heaping tsp of dough into baking sheets lined with parchment, ensure you maintain 3-inch spacing apart. Bake your cookies till it turns golden brown or continues to about 12-15 minutes. Allow to cool down inside baking sheets for about 10 minutes. Move to wire rack and allow to completely cool.

3. The pistachio cream and assembly: with the use of an electric mixer set at medium-high speed, whisk pistachio paste, butter, vanilla, powdered sugar, and salt till the mixture turns fluffy or light or continue to about 3 minutes.

4. Sprinkle one scant tsp of pistachio cream on a flat cookie. Add another cookie and flat it side down; even out the filling by pressing tightly. Do it again with cookies and pistachio cream that remains.
