Make sure you eat the skin as it’s where most of the good stuff is!
Sweet Potato with Feta Cheese is a great way of cooking sweet potatoes, which are an excellent source of beta-carotene and potassium.
It is an easy recipe and you can prepare ahead

Ingredients: Sweet Potato with Feta Cheese
200g Feta cheese
6 medium sweet potatoes
2 red chilies, deseeded and long sliced
1 garlic clove, crushed
1 tsp cumin seeds, lightly toasted
1 lemon zest
3 tbsp parsley, chopped
Preparation Method: Sweet Potato with Feta Cheese
Preheat the oven to 200 C, gas 6.
Place the Feta cheese in a bowl, drizzle over the olive oil and include chilies, cumin seeds, garlic and lemon zest. Place it on one side. After that you will keep in the fridge overnight.
Wrap the sweet potatoes in foil and bake in the preheated oven for 1 hour 30 minutes or until soft inside. Open and split sweet potatoes lengthways and top with the ready feta mixture.
Sweet Potato with Feta Cheese is ready. Sprinkle over the chopped parsley and serve.
