These Sweetcorn Patties are delicious additions to any party buffet; these sweet corn patties are very simple to prepare. Serve them with chili sauce or any favorite Dip.
Ingredients: Sweetcorn Patties Recipe
325 g can sweetcorn, drained
1 onion, finely chopped
1 tsp curry powder
1 tsp ground coriander
1 garlic clove, crushed
2 spring onions, chopped
½ tsp baking powder
3 tbsp all purpose flour
1 large egg
Salt to taste
4 tbsp cooking oil

Mash the drained sweetcorn lightly in a medium sized bowl. Add all the remaining ingredients, except oil, one at a time and keep stirring after each addition.
Heat the cooking oil in a frying pan. Drop one by one full tablespoon mixture carefully on to the hot oil making a gap among each other to avoid mixing as they cook.
Cook for 4-5 minutes and turn each patty once, until they are golden brown and crisp on front. Take care not to turn them too soon until they cook through, otherwise they will break up in the pan.
