325 g can sweetcorn, drained
Medium onion, finely chopped
1 tsp curry powder
1 tsp ground coriander
One garlic clove, crushed
2 spring onions, chopped
½ tsp baking powder
3 tbsp all purpose flour
1 large egg
Salt to taste
4 tbsp cooking oil

Mash the drained sweetcorn lightly in a medium-sized bowl. Add all the remaining ingredients, except oil, one at a time and keep stirring after each addition.
Heat the cooking oil in a frying pan. Drop one by one full tablespoon mixture carefully on to the hot oil making a gap between each other to avoid mixing as they cook.
Cook for 4-5 minutes and turn each patty once, until they are golden brown and crisp on front. Take care not to turn them too soon until they cook through, otherwise, they will break up in the pan.
Take out patties from the frying pan with a spatula and drain on absorbent paper. Serve warm with Chutney or yogurt dip.
