Carrots, medium – 3
Courgettes, medium – 3
Chicken stock – ½ cup
Fresh parsley, chopped – 2 tbsp
Salt and black pepper – to taste


Preparation Method:

By using a peeler or a sharp knife, cut the carrot and courgettes into thin ribbons.

Bring the stock to boil in a large saucepan and add the carrots. Return the stock to the boil then add the courgettes. Boil rapidly for 2-3 minutes or until the vegetable ribbons are just tender.

Stir in the parsley, season lightly and serve hot.
