Achaari Loki Recipe

Vegetables have largely been an ignored palate on our tables however this will have to change, especially with delicious healthy vegetarian recipes such as Achaari Loki Recipe. Add that pizzazz to your veggies and try out this super taste gourd dish which will have you licking your fingers. The recipe is also backed by Shireen Anwer and a personal favorite of mine in vegetarian dishes.

 

Ingredients: Achaari Loki Recipe

½ kg loki (gourd) peeled and sliced in 1 inch pieces
2 onions sliced thinly
2 tomatoes chopped
10 curry leaves
6 whole red chilies
1 Medium capsicum
½ tsp kalongi (black caraway)
½ tsp saunf (fennel seeds)
¼ tsp methi daana (fenugreek seeds)
1 tsp cumin freshly roasted and crushed
1 tsp salt
1tsp red pepper crushed
½ tsp turmeric
¼ cup oil
2 tbsp coriander leaves chopped

 

 

How to cook Achaari Loki Recipe

In a pan heat oil and fry onion, when slightly brown add in capsicum, whole red chilies, curry leaves, turmeric powder, red pepper, salt, methi daana, saunf and kalongi. Fry it a little and then add tomatoes and fry well until the tomatoes are mixed with the spices. Add the loki and ½ of water and cover to cook until properly done. Garnish with chopped coriander and serve.
