Baked Stuffed Tomatoes Recipe

If you want to impress your guests, you must make different types of dishes. Baked stuffed tomatoes are low in cholesterol and they are good source of vitamin A.

4 tomatoes

25 g Parmesan cheese, grated

2 garlic cloves, crushed

2 tbsp dried breadcrumbs

1 tbsp dried oregano

1 tbsp chopped fresh parsley

Salt and pepper to taste

2 tbsp olive or vegetable oil

Cut a thin slice from the base of each tomato to sit flat. Cut the slice from top of each tomato and reserve.

With the use of a spoon, scoop out flesh and seeds from the tomatoes; discard. Sprinkle inside with salt.

Take a small bowl; combine Parmesan cheese, garlic, bread crumbs, parsley, pepper and oregano.

In a microwave-safe baking dish, arrange tomatoes with distance. Spoon stuffing into tomatoes, pack in firmly. Drizzle oil over tomatoes. Cook on high for 6 minutes, rearranging halfway through cooking.

Allow tomatoes to stand for 2 minutes. Transfer to serving platter; place reserved tomato slices on top of stuffing. Serve immediately.
