It was not easier to get blueberries until recently but now they are available easily in the larger supermarkets, and green grocery stores. Only the finest blueberries should be chosen to make this popular healthy drink of Sweden. Try it at your home, it is awesome!

Makes 1 litre
Ingredients: Blueberry Cordial Recipe
750g fresh or frozen blueberries
225g white sugar
1 tbsp lemon juice

Wash all the blueberries and keep them in a large bowl with water.
Cover the microwave proof bowl with the cling film and pierce the several times with the knife tip.
Cook the blueberries on high for 3-5 minutes or until the berries begin to break up.
Roughly mash the berries with a masher or a fork and allow the berries to cool slightly and their juice to pour out.
Strain the juice from the berries into another bowl through a nylon sieve, gently stirring the berries in sieve so they release all their juice but stone and fibres are retained and can be discarded.
Mix the sugar into the fruit juice and cook on high for 6-6 minutes, stirring after each 1 minute of cooking time so that the sugar dissolves completely but does not caramelize.
Stir in the lemon juice and pour the syrup into clean screw top bottles for storing in a refrigerator until required.
Serve diluted with soda water or with dry white wine or undiluted over any dessert or icecream.
You can use cranberries or damsons in place of the blueberries in this healthy drink recipe.
