Bread and Butter Pudding recipe is quick, simple and nutritious. What more could you ask for an inexpensive mid-week meal.
Ingredients: Bread and Butter Pudding
6 slices of white or brown bread, remove the crusts
¼ cup butter or margarine
1 bunch spring onion, sliced
1 ½ cups cheddar cheese, grated
2 cups milk
Salt and black pepper
Parsley sprigs, to garnish
Preparation Method: Bread and Butter Pudding
Grease 1.5 litre baking dish with a little of butter or margarine. Melt the remaining butter or margarine in a small saucepan and stir fry the spring onions until softened and golden.
Meanwhile, cut the bread into triangles and layer half of them in the baking dish. Top with the sliced and fried spring onions and half of the cheddar cheese.
Beat the eggs with milk and add salt and black pepper. Layer the remaining triangles of bread in the dish and carefully pour over the milk mixture. Leave to soak for about 20 minutes.
Sprinkle the remaining cheese over the soaked bread.
Bake in a preheated oven at 190 C for 35-40 minutes until puffed up and golden brown.
Garnish with parsley sprigs and serve at once.
