This is a refreshing dip that is especially good served with fresh vegetables crudités and breadsticks.
Ingredients: Butter Bean, Watercress and Herb Dip
225 g or 1 cup cottage cheese
400 g butter beans, rinsed and drained
1 bunch spring onion, chopped
50 g watercress, chopped
4 tbsp mayonnaise
3 tbsp mixed herbs, chopped
Salt and freshly grounded black pepper
Watercress sprigs, to garnish
Vegetable crudités and breadsticks, to serve
Butter Bean, Watercress and Herb Dip
Put the cottage cheese, butter beans, water-cress, spring onions, mayonnaise and herbs in a blender or food processor and blend until finely smooth.
Season with salt and black pepper and spoon the mixture into a dish.
Cover and chill for several hours before serving.
Transfer to a serving dish or individual plates and garnish with watercress sprigs.
