  • Flat-leaf parsley fresh and chopped 2 tbsp
  • 3-4 cups beef broth
  • ¼ cup chopped sun-dried tomatoes
  • 1 pound butternut squash
  • 1 cup Marsala wine
  • 2 tbsp flour
  • ½ teaspoon black pepper freshly ground
  • ½ tsp salt
  • 2 pounds stewing beef
  • 1 tbsp chopped fresh thyme
  • 1 tbsp minced fresh rosemary
  • 2 cloves garlic
  • 1 onion chopped and peeled
  • 3 tbsp olive oil


Preparation Method:

Put 3 tbsp olive oil in a large soup pot over medium level heat. Put in thyme, rosemary, garlic, and onions in the pot and sauté. Keep the heat on till the onions are tender. Now toss the cubes of beef in flour, pepper, and salt. Put in the beef to pot and turn up the heat source to medium-high level. Continue the process until the beef turned brown. It will take around 5 minutes

Put in the Marsala wine. Softly stir up the mixture with the help of a wooden spoon. Now put in the sun-dried tomatoes and butternut squash. Stir the mixture to combine the ingredients together.

In order to cover the squash and beef, add sufficient beef broth. Turn on the heat and boil the mixture. Cover the pot and reduce the heat level for one hour.

Use the pepper and salt to season the stew. Sprinkle with the chopped parsley.
