350 g spinach leaves, torn

30 g butter or margarine

2 small potatoes, peeled and diced

1 onion, chopped

300 ml Vegetable stock to stock cubes

125 ml half cream or milk

1 tbsp cornflour mixed with 2 tbsp water

¼ tsp black pepper

¼ tsp salt

Grated nutmeg to garnish

Take a deep 3-liter microwave-safe bowl, combine butter or margarine, potatoes, onion and 4 tablespoon vegetable stock. Cover the bowl and cook for 8 minutes on high (100% power) or until potatoes are tender, stirring twice.

Now add spinach and cook for 5 minutes on high. Let them keep on a side and make it cool. In a food processor or blender, process the soup until smooth and return to the bowl.

Add remaining vegetable stock, milk or cream, dissolved cornflour, salt, black pepper, and grated nutmeg; stir until smooth. Cook again on high for about 5 minutes until piping hot, stirring halfway through cooking.

You can serve hot or cover and refrigerate until well chilled.
