6 swordfish steaks (1.2 kg)

1 tsp grated lime rind

¼ lime juice

 

Tomato and chili butter

125g butter

1 tbsp lime juice

1/3 cup sun-dried tomatoes, finely chopped

1 tbsp sambal oelek

1 tbsp parsley, finely chopped

Combine fish, lime rind and lime juice in a large shallow dish. Cover and refrigerate for 30 minutes.

Drain fish and discard marinade

Cook fish on the heated oiled barbecue, uncovered until browned from both the side and just cooked through.

Tomato and chili butter

Beat butter in a small bowl with an electric mixture until light and fluffy, add tomatoes, sambal oelek, and chopped parsley. Spoon the mixture onto the grease-proof paper or foil. Roll up firmly; shape into a log. Refrigerate 1 hour or until firm.
