Roasted Eggplants or Baingan Bhaja is a popular Bengali recipe. It is a shallow fried or pan toasted dish prepared by marinating eggplants slices in mixed spices. You can present this roasted brinjal as a side dish that can be eaten with boiled rice/parathas or you can also enjoy them as a snack with the main dish. Ingredients:

Roasted Eggplants | Baingan Bhaja

2 Eggplants/ Brinjals/Baingan   long or round

1 tbsp Turmeric Powder/Haldi-

½ tsp to marinate and ½ tsp to mix in water

I tsp Red Chili Powder/Laal Mirch

2 tsp Coriander Powder/Dhaniya

½ tsp Dried Mango Powder/Amchoor tartly powder

3/4 tsp Mixed spices powder/Garam Masala-

2 tsp Mustard oil

 

Preparation Method:

Roasted Eggplants | Baingan Bhaja

Cut eggplants into round slices (slices should be of medium thickness, neither too thick and nor too thin).

Keep these eggplants rings in turmeric water.

Now take all the dry spices and salt in a bowl.

Mix water gradually into the spice mixture to make a marinade.

Take out the eggplants slices from the turmeric water and marinate into this mixture for 20-25 minutes.

Heat a nonstick pan and grease it with mustard oil. When heated, keep eggplants slices on it and cook till tender and golden brown.

Flip them and cook them from the other side also.

The delicious Roasted Eggplants or Baingan Bhaja is ready to serve. Enjoy it with Paratha/Roti/Lachcha Paratha.

Roasted Eggplants | Baingan Bhaja

Keeping eggplants slices in turmeric water prevents them from turning black, as they usually do within a couple of minutes after cutting them.

To make turmeric water, simply add 1/2 teaspoon of turmeric powder in a glass of water and mix well.
