Ingredients: Smoked Almond Snack Bars

1 ½ cup smoked almond

½ cup pepita seeds; pumpkin seeds

¼ cup of sesame seeds, puffed and casual millet

1 ½ tbsp chia seeds; optional

½ tsp smoked paprika

½ tsp onion or garlic powder

½ tsp salt or as needed

¼ cup of brown rice syrup

2 tbsp of honey

½ tsp of liquid smoke; optional

 

 

Preparation Method: Smoked Almond Snack Bars

Preheat oven to 325 0F and take 8×8 inch baking pan. Coat the sides and bottom with cooking spray. Chop almond into small pieces and put some almonds whole. Mix pepita seeds, almonds, paprika, salt, garlic powder and millet in a bowl.

Mix honey and brown rice syrup in a measuring cup and microwave just for 30 seconds. Stir with liquid smoke. Pour this syrup over nut mixture and mix them well until ingredients become coated. Put this mixture in a baking pan along with a spatula.

Spray your hands with cooking spray and then press nuts into the pan gently. Let it bake up to 18-20 minutes until syrup is bubbling and toasty color at sides of the pan. Let it cool until they turn into solid blocks, but a bit flexible. If bars are more solid, then put in oven and let it become a bit pliable.

Put these cooled bars on a cutting surface. More probably you may need to use edge of a knife at sides of pan to remove bars completely. Spray the knife with cooking spray and slice whole brick into 10 equal bars. Keep slide on cutting board and don’t remove. Let all bars cool completely.

It is better to leave bars on cutting surface for several consecutive hours before to pick. They will take longer to become firm. Use an airtight container to preserve these bars between parchment layers. Put bars for 2 weeks in a refrigerator and pack individually. You can preserve the bars for 3 months.

 

Recipe Notes: Smoked Almond Snack Bars

1-Finding Smoked Almonds; You can find smoke almonds in some stores and at few farms. Usually, these almonds are available in Food Stores and in form of Whole Foods.

2-Using Plain Almonds; If you are using plain almonds, then liquid smoke can be good. Use almonds for 15 minutes to heat in oven at 325 0F for toasting them.

 

Troubleshooting: Smoked Almond Snack Bars

1-Bars are falling & loose enough; Maybe you didn’t bake bars quite long. You can pop them again in oven and let them cool on room temperature. Shift bars to fridge for several hours to make them firm.

2-Bars are firm, but little sticky; Your bars got more heat just a couple of minutes more than needed. Cut parchment into pieces and place at bottom of bars. Store the bars in a fridge for a few hours can also improve the look and firmness of bars.

3-Bars are harder like rocks; It is due to more time for baking in oven. You need to chop or cut them into bite-sized pieces and eat with granola.
