Sweet Potato Salad Recipe

Sweet Potato Salad Recipe is simple healthy salad of baked sweet potato pieces and carrot that make a great dish. It is an easy to make salad dish and a crowd pleasing recipe. You can make variation by adding different seasonal fruits.

 

Ingredients: Sweet Potato Salad Recipe

 

Sweet potato, peeled, diced                              1

Carrot, cut thick slices                                       2

Tomatoes                                                            3

Iceberg leaves                                                   10

Chick peas – canned                                          75 g

 

 

For Dressing: Sweet Potato Salad Recipe

 

Clear honey                                                        1 tbsp

Natural yogurt                                                   6 tbsp

Salt                                                                       to taste

Black pepper                                                       to taste

 

 

For Garnish: Sweet Potato Salad Recipe

 

Sultanas                                                               1 tbsp

Walnuts                                                                1 tbsp

Onion cut into rings                                            1 small

 

 

Preparation Method: Sweet Potato Salad Recipe

 

Place the sweet potatoes in a large saucepan and cover with water. Bring to boil and cook they become soft but not soggy, cover the saucepan and keep aside. Now boil carrots for a few minutes but make sure to keep them crunchy. After that, add to the diced sweet potatoes.

 

Cut the tomato and discard their seeds. Chop up the tomato flesh roughly.

 

Take a bowl with lettuce leaves and combine with sweet potatoes, chick-peas, carrots and cubed tomatoes.

 

For the dressing, blend together all the ingredients and beat together with a fork.

 

Spoon the dressing on the Carrot and Sweet Potato Salad. You can serve the salad in separate bowls also.

 

Garnish the Sweet Potato Salad with the walnuts, sultanas and onion rings.
