Duck is normally a high fat meat but can get rid of a good share of the fat cooked in this way. (Remove the duck skin completely so the meat can be dry.) On special occasion, duck breasts are a good choice and they are also not expensive. For variation, you can apply the ingredients on Chicken breast also.

Boneless breast portions of duck 4
Soy sauce 2 tbsp
Clear honey 3 tbsp
Sesame seeds 1 tbsp
Cornflour 1 tsp
Salt to taste
Black pepper to taste

Preheat the oven to 180 C. pierce the duck skin throughout. Cut the breast skin slantwise at gaps with a sharp knife.
Put the duck breast on a rack in the roasting tin and cook for 1 hour. Mix 1 tsp soy sauce with 2 tbsp clear honey and brush all over duck breast. Sprinkle the sesame seeds all over. Roast for 20 minutes or until they becomes golden brown.
Meanwhile, shred the rind from one orange and squeeze juice from 2 oranges. Mix in the cornflour with honey and remaining soy sauce. Now heat and keep stirring, until it becomes clear and thickened.
Seasoning: Peel and cut the remaining oranges. Serve the Mandarin Duck recipe with the sauce decorated with orange slices accompanied with mixed vegetable salad.
