This tasty red lentil soup with yogurt, flavored with chopped coriander, can easily be prepared in the microwave. The yogurt adds a slight tang to the soup.

Preparation Time     30 minutes

 

Ingredients:

Red Lentil Soup Recipe

225g red lentils

2 tbsp butter

1 onion, chopped finely

One large carrot

1 celery stick, chopped finely

1 bay leaf

1.25 liters vegetable or chicken stock

2 tbsp chopped coriander

4 tbsp low fat, natural yogurt

Salt and pepper

Coriander sprigs, to garnish

 

Preparation Method:

Place the butter, onion, and celery in a large bowl. Cover and cook in a microwave on high temperature for 3 minutes.

Add the carrot, lentil and bay leaf. Pour in the stock. Cover and cook on high power for 15 minutes, stirring halfway through.

Remove the bowl from the microwave oven, cover and stand for 5 minutes.

Remove and discard the bay leaf then process in batches in a food processor until smooth.

Pour the soup into a clean bowl. Season with salt and pepper to taste and stir in the coriander. Cover and cook on high power for 4-5 minutes until piping hot.

Serve in warm soup bowls. Place 1 tbsp of the yogurt on top of each serving and garnish with sprigs of fresh coriander.
