Sweet Potato and Onion Soup recipe include sweet potato with its distinctive flavor and color, combined with a touch of orange and fresh coriander.

Sweet Potato and Onion Soup

1kg sweet potatoes

2 tbsp vegetable oil

1 carrot, diced

2 onions, sliced

2 garlic cloves, crushed

300ml unsweetened orange juice

600ml vegetable stock

225ml low-fat natural yogurt

2 tbsp fresh coriander, chopped

Salt and pepper


To garnish

Fresh coriander sprigs

Orange rind



Preparation Method:

Sweet Potato and Onion Soup

Heat the vegetable oil in a large saucepan and add the sweet potatoes, onions, carrot, and garlic. Sauté the vegetables over a low heat, stirring constantly for 5 minutes until softened.

Pour the vegetable stock and orange juice and bring to boil.

Reduce the heat and simmer for 20 minutes or until the sweet potatoes and carrots are tender.

Transfer the mixture to a blender in batches and process for 1 minute until pureed. Return the puree to the saucepan.

Stir the yogurt and coriander and season with salt and pepper to taste.

Serve the soup in warm bowls and garnish with coriander sprigs and orange rinds.

Cook’s Tip:

This soup can be chilled before serving if preferred. If chilling, stir the yogurt into the dish just before serving. Serve in chilled soup bowls.
