Thai Style Sweetcorn Soup Recipe is a very quick and easy soup recipe. You can make this sweet corn soup in minutes. If you are using frozen prawns then defrost before adding to the soup.

 

Ingredients:

Thai Style Sweetcorn Soup Recipe

Cream-style sweetcorn, 425 g

Sesame oil or sunflower oil, ½

Spring onion, thinly sliced, 2

Garlic clove, crushed, 1

Chicken stock, 2 ½ cups

Prawns, peeled and cooked, 225 g

Green chili paste or chili sauce, 1 tsp

Salt and black pepper, to taste

Fresh coriander leaves, to garnish

 

Preparation Method:

Heat the oil in a large heavy-based saucepan and sauté the onions and garlic over a medium heat for 1 minute, until softened but not browned.

Stir in the chicken stock, cream style sweetcorn, prawns and chili paste or chili sauce, if you are using.

Bring the Thai Style Sweetcorn Soup to the boil, stirring occasionally. Season to taste then serve at once, Sprinkled with fresh coriander leaves to garnish.

If cream-style corn is not available, use ordinarily canned sweetcorn, pureed in a food processor for a few seconds, until creamy yet with some texture left.
