Ingredients:

  • Minced scallions/ Spring onion– 1
  • Minced garlic – 1 clove
  • Ground chicken – 1 pound
  • Egg – 1
  • Sesame oil – 2 tablespoons
  • Fish sauce – 1 teaspoon
  • Grated ginger – 2 tablespoons
  • Rice wine vinegar – 2 tablespoons
  • Breadcrumbs – 1 ½ cups
  • 1 teaspoon in addition with three tablespoons Teriyaki sauce
  • 1 teaspoon in addition with 2 tablespoons Mirin

 

How to Cook:

Yakitori Chicken Meatballs

Mix the breadcrumbs, egg, half the ginger, chicken, garlic, scallion, teaspoons of teriyaki sauce and mirin in a bowl. Now roll the ingredients into tablespoon size meatballs. Use sesame oil to sauté the balls. Remove when these are brown from all sides.

 

Mix the remaining mirin, ginger, teriyaki, fish sauce and vinegar in a pan and cook the ingredients for a minute. Pour these ingredients over the chicken meatballs. Now bake these meatballs for ten minutes at 375 C.

 

It is up to you to serve meatballs on skewers or sesame noodles on top.

Sesame Noodles

  • Minced shallot – 1
  • Minced garlic – 2 cloves
  • Peanut butter – ¼ cup
  • Minced scallion – 1
  • Teriyaki sauce – 1 tablespoon
  • Rice wine vinegar – 2 tablespoons
  • Mirin – 1 tablespoon
  • Fish sauce – 1 teaspoon
  • Sesame oil – 4 tablespoons
  • Whole wheat spaghetti or soba – 1 package
  • Sesame seeds – 1 teaspoon (for garnishing)
  • Lemon juice – ½ teaspoon
  • Sake – ¼ cup

Yakitori Chicken Meatballs Recipe

Preparation Method:

  • Take pasta or soba and cook them in salted water as per the given instructions.
  • Pour half sesame oil in a pan and sauté the garlic, scallions, and shallots until these get softened. Mix the peanut butter, mirin, fish sauce, sake, teriyaki sauce, and vinegar. Stir the ingredients and cook for five minutes with pasta water (½ cup).
  • Turn off the heat. Add the lemon juice, remaining sesame oil and pasta. Garnish with scallions and sesame seeds.
