These deep-fried balls of risotto go by the name of Suppli al Telefono in their native Italy. Stuffed with mozzarella cheese, they are very popular snacks that are hardly surprising as they are quite delicious. They make a wonderful start to any meal.
Ingredients: Fried Rice Balls Stuffed with Mozzarella
2 cups Risotto made with vegetable stock
115g mozzarella cheese, cut into small cubes
Breadcrumbs and plain flour, to coat
Oil, for deep frying
Dressed endive or green salad with cherry tomatoes, to serve

Put the risotto in a bowl and allow it to cool completely. Beat 2 eggs and stir them into the cooled risotto until well mixed.
Use hands to form the rice mixture into like large egg balls. If the mixture is too moist to hold its shape well, stir in some breadcrumbs. Poke a hole in the centre of each ball with your finger then fill it with small cubes of mozzarella and close the hole over again with the rice mixture.
Heat the oil for deep-frying until a small piece of bread sizzles as soon as it is dropped in.
Spread some flour on a plate. Beat the remaining egg in a shallow bowl. Take another plate of breadcrumbs. Roll the rice balls in the lour then in the egg and finally in the breadcrumbs.
Fry the rice balls, a few at a time in the hot oil until golden and crisp. Drain on kitchen paper while the remaining rice balls are being fried and keep warm. Serve at once with a sample plate of dressed salad and cherry tomatoes.
