The Mushroom Rolls Recipe is one of the perfect party bites.  These mushroom croustades don’t require much time to complete and juicy to eat during a garden party or cocktail party.

1 short French stick or bread roll, 10 inches

2 tbsp olive oil

250 g open cup Mushrooms, quartered

2 tsp mushroom ketchup

2 tbsp skimmed milk

Two tsp lemon juice

2 tbsp snipped fresh chives

Salt and ground black pepper

Snipped fresh chives, to garnish



Preparation Method:

Preheat the oven to 200° C. Cut the French bread in half length ways. Cut a scoop out of the soft middle of each half, leaving a thick border all the way round.

Brush the bread with oil, place on a baking sheet and bake for about 6-8 minutes until golden and crisp.

Place the mushrooms in a small saucepan with the mushroom ketchup, milk, and lemon juice. Simmer for about 5 minutes or until most of the liquid is evaporated.

Remove from the heat then add the chives and season with salt and black pepper. Spoon into the bread croustades and serve hot, garnish with snipped chives.
